Camping Food: Row, Row, Row Your Potato Boat

Feeling down and blue after a long day at camp? Why not indulge in a camping food (comfort food) that will fill your heart with joy and paint your face with the biggest smile? This Potato Boat will do it for you. The warmth of baked potato plus the feel of delectable melted cheese would instantly brighten up your mood not to mention the ham and bacon that just simply kicks the frown out of you. POTATO BOAT

For this recipe, you will need:
Large potatoes, baked
Sliced ham
Cooked bacon slices
cheese slices {we like marble}
Sour cream for topping
Green Onion for topping

Directions:

Slice baked potatoes

Between the cuts, stuff a slice of cheese, bacon and ham.

Add small dabs of butter on top of each of the slices. Salt & pepper to taste.

Wrap potato in double layer of tin foil lightly sprayed with cooking spray.

Place on a hot BBQ for 20+ minutes…until potato is hot and cheese, ham & bacon have melted together and it looks toasty and good!

Top the Potato Boat dinner with sour cream and green onion if you like.

You can make variations of this if you like. If you are eating healthy, you might want to change the ham and bacon to something more health conscious like leafy greens. You can even put steamed chicken and pesto in between then just sprinkle it with parmesan cheese.  Have good variation for this? Share it with us in the comments.
