At The Camp: Eat Healthier to Live Longer

It is pretty exciting when you get to cook in camp. There are a lot of things that you want to try like desserts over the campfire, not to mention S’mores and Pies. Add something amazing to your next camping meal plan. Loaded with carbohydrates, vitamins, and minerals, this healthy meal will definitely get you going!

Camp Stir Fry

Ingredients

  • 1.5 cups brown rice
  • 1 tablespoon cooking oil
  • 2 pounds frozen vegetables
  • 7 ounces baked tofu
  • Teriyaki sauce

Supplies

  • Large Skillet
  • Spoon or spatula
  • Knife
  • Cutting board

Instructions

At Home

Cook rice according to package directions. Let cool, and then freeze in a plastic bag. Or skip the prep work and buy frozen rice at the supermarket.

At Camp

  1. Preheat 1 tablespoon oil in a skillet.
  2. Add vegetables and cook until heated through.
  3. In the meantime, cut tofu into 1/2″ cubes.
  4. Add tofu and rice to vegetables. Cook until heated through.
  5. Add teriyaki sauce to taste.
  6. Cook an additional 2-3 minutes and serve.

Serves 4. This recipe works equally well over a campfire. Before heading out on your trip, take the time to write out a healthy menu to ensure that you and your children are getting the nutrients you need to keep you energized for the duration of the camping trip.
